To dredge or not to dredge?

Chicken & Dredging Ingredients/Notes/Suggestions:

  • 2 lbs boneless skinless chicken breasts, cut into pieces
  • 1 egg
  • 1 1/2 tsp salt
  • Pinch of black pepper
  • 1/2 cup cornstarch
  • 1/4 cup flour (regular or gluten free)
  • 2 garlic cloves, minced (omit for LOW FODMAP, also jarred minced garlic is super handy)
  • Note: Garlic will be added when cooking chicken

Sauce Ingredients/Notes/Suggestions:

  • 1 tbsp of cornstarch
  • 1/2 cup of white sugar
  • 1/4 tsp of ginger
  • 2 tbsp of rice wine or Mirin (don’t use rice wine vinegar)
  • 1/4 cup of water
  • 1/2 cup of white vinegar
  • 1 tsp of sesame oil
  • 1 whole orange zest
  • Red pepper flakes (sprinkled over top)

Dredging Instructions (Option #1):

  1. Combine salt, black pepper, cornstarch and flour in a mixing bowl. Scramble egg in a small bowl.
  2. Cut chicken into pieces.
  3. Dredge by dipping chicken pieces in the egg and coating with flour.

Dredging Instructions (Option #2):

  1. Combine salt, black pepper, cornstarch and flour in a mixing bowl. Scramble egg in a small bowl.
  2. Cut chicken into pieces.
  3. Put chicken pieces in a gallon size ziplock bag or sealed container.
  4. Add egg and mix, shake and incorporate egg over chicken.
  5. Add flour mixture and mix, shake and incorporate with egg/chicken mixture.

Dredging Instructions (Option #3):

  1. Skip dredging all together and make dish with chicken pieces

Orange Chicken Instructions:

  1. Make sauce and set aside.
  2. Dredge chicken (if applicable - I often skip dredging in interest of time and hunger)
  3. Prepare rice per package instructions or for 8 minutes using the rice feature on the Instant Pot.
  4. While rice cooks, heat a large skillet over medium heat with sesame oil. Once heated, cook chicken (if chicken is coated, you might have to add more oil to prevent the breading from sticking to the pan). Once chicken is cooked, add garlic and saute for a minute.
  5. Pour sauce over chicken and incorporate. Continue to mix in the sauce and it will thicken.
  6. Once the sauce has thickened, top with red pepper flakes and serve over rice.
