Fried Rice

Cooking is not a perfect science to me, I often wing recipes to fit my mood, preferences and pantry.

Main Ingredients/Notes/Suggestions:

  • 1-2 cups uncooked and chilled rice (Instant Pot makes the best rice & I typically always use leftover rice)
  • 3 tbsp sesame oil or butter (guesstimate for heating up the pan)
  • Meat of choice or leave as vegetarian (e.g. chicken, shrimp, tofu, pork, salmon)
  • ALT meat choice - leftovers/use what you have (e.g. pulled pork, rotisserie chicken)
  • 2 garlic cloves, minced (omit for LOW FODMAP, also having jarred minced garlic comes in hand)
  • 1 small yellow onion or white, chopped (omit for LOW FODMAP)
  • 1 bell pepper (any color, my preference is red), chopped
  • 3/4 cup carrots, chopped
  • 2 eggs, beaten (or fried and added as a garnish)

Other Ingredient Options:

  • 4 cups cooked and chilled rice (Instant Pot makes the best rice & and typically always use leftover rice)

  • Frozen vegetable medley

  • Peas (honestly, fuck peas)

  • 1 zucchini, chopped

  • Any vegetables in the fridge, chopped

  • Pineapple

  • Garnish Options (all optional)

  • Green onion, chopped

  • Jalapeno, thinly sliced

  • Sriracha

  • Fried Egg (my preference)

Sauce Ingredients/Notes/Suggestions:

  • 3-4 (generous) tbsp of soy sauce
  • 1 tsp of fish sauce
  • 1 tsp of oyster sauce (can do all oyster or all fish sauce)
  • 1/2 tsp toasted sesame oil
  • 1/2 tsp ground ginger
  • 2 tbsp Sriracha or another chili paste (I skip and put it over the top as a garnish)

Instructions:

  1. Prepare rice per package instructions or for 8 minutes using the rice feature on the Instant Pot. Once cooked, lay flat on cookie sheet and cool in fridge. Or use leftover rice from previous meal.
  2. Prepare sauce and set aside.
  3. Prep ingredients.
  4. Heat a large skillet over medium heat with sesame oil or butter. Once heated, cook meat until it’s cooked through (if applicable or skip to next step). If you are using leftovers/rotisserie chicken, add after vegetables have sautéed.
  5. Once meat is cooked, add garlic, and vegetables of choice. Sauté for a few minutes.
  6. Once vegetables are sautéed, pour beaten eggs over meat and vegetables, stirring constantly until scrambled (if applicable or skip to next step if you plan on putting a fried egg on top).
  7. Add rice and sauce. Toss until evenly combined, most annoying step because cold rice clumps together.
  8. Dish up and add preferred garnishes.
